Salmon on a weeknight
Twelve minutes in the oven while the potatoes finish. Dinner that looks like effort.
I buy one side of salmon on payday and cut it into portions for the freezer. On a Wednesday I take one out in the morning and by evening it is ready for the oven with salt, lemon and a bit of dill.
Twelve minutes. The potatoes boil while it cooks. A handful of spinach wilts in the same pan.
Why it works
It is quick, it feels like a proper meal, and nobody complains. In a house with children, a dinner nobody complains about is worth writing down.
